I didnt want to eat plain chicken fo dinner last night so I decide to make my own concoction for a chicken dinner. I chopped up some onions, tomatoes, and zucchini tossedit on the seasoned chicken and baked for 40 min. I just kept thinking, "Gosh, I hope this turns out ok."
Well it did just that. It turned out ok. Nothing spectacular but definitely not bad. The chicken still tasted plain but the veggies were good with it. I think next time I need to marinate and add some more veggies.
Lesson learned: I'm no Emeril but there is no harm in trying to be...unless it is undercooked, overcooked or tastes terrible.
Recipe:
1 lb. Chicken breasts
1/2 onion cubed
1 zucchini sliced with skin
1 roma tomato
Preheat oven to 375
Season chicken (I used pepper, garlic powder, basil)
Put on baking pan with extra virgin olive oil and throw veggies on top
Bake for 40 min or until chicken is done.
Other things I am going to add next time...red peppers, broccoli, some cayenne pepper, and maybe some red onion instead of white.)
